Replacing saturated fat with olive oil in your regular cooking may reduce the risk of coronary heart disease, the leading cause of heart attacks and strokes. Olive oil contains monounsaturated fatty acids, which helps in increasing HDL, "good" cholesterol, and decreases LDL, the "bad" cholesterol.
